Create an integration

System → Extensions → Integrations gives you an access token. The connection screen names each resource it needs, in Magento’s own words.

Which permissions does the integration need?

The connection screen lists them by name and tells you which endpoint asks for each, so the integration is granted exactly what is used.

What about several store views?
